A weekend of the great outdoors

As I am preparing for my return to the real world tomorrow, I feel a strong sense of dread. As I won't have a weekend or free week for a long while! Instead of focusing on that.......I'm sharing a few snapshots from our awesome weekend!

This weekend we were in Big Lake, AZ -- which is about 20 miles from the New Mexico border (just 5 1/2 hours from our house). (last weekend we were in Parker Canyon...which I will blog about another day)

We camped from Friday-Monday, which was the perfect length of time. The temperatures were a great escape from hot Tucson. In fact...it was VERY cold at night. It was in the low 30's at night, 60's during the day. The trout fishing was incredible.

Here's a few snapshots:

Home Sweet Home for the weekend!

But...Ryan did teach me how to use a wood-saw! There were tons of dead/fallen trees lying around. So we cut all our firewood for the weekend! I felt very "woodsy". I think I need some flannel!!

Saturday we rented a boat for about 5 hours. It was great!

View of the lake! Notice the snow-topped mountains! Apparently 3 weeks prior, this whole area was covered in snow. They get 10-13 feet of snow on avg each year! Are we really in AZ still?! Yep :)

We caught a total of 7 fish...but only kept 4 for dinner.

The fire wood we cut up!

Stuffed rainbow trout = new favorite food. We descaled/cleaned the fish, stuffed it with bell peppers, onions, lemon, garlic, s & p - and wrapped it in foil to cook over the fire. Delicious!!

The finished product! I also cut up onions, carrots, & potatoes as a side dish.

We went for a 4 mile hike, that lead us to this view -- incredible!
I was too much of a scaredy-cat to perch on this rock-upon-a-cliff. But Ryan seemed very peaceful doing so!

This weekend was the 1st time Ryan & I have had time for just the 2 of us in a very long time! It's been so busy and crazy lately. This trip was needed!

Looks like an amazing get away for you guys! I am glad you got some alone time in the graet outdoors as I know that is restorative for both of you!

I really enjoyed this blog, trout, prepared like that, is one of my favorite meals. Glad you were able to enjoy some cooler days, wish we had some warmer ones here, and sun would be nice, too...

Your trout looks so good, I am seriously having cravings now! I am going to borrow your recipe. Unfortunately the store-bought trout will not taste as delicious as I'm sure your fresh trout did.

One Confused Lady

Yesterday morning was packed with a session of cross training.....rushed home to shower and get professional-looking....headed across town for an interview.....kicked butt at my interview...."bopped" over to our house to see the progress of the build......headed to the "design center" to sign more paperwork.... (Side note: I cannot get over just how much paperwork is involved in building a house. Holy Hannah. And we haven't even closed !!! Iy-yi-yi....Those lovely people in history who got law-suit-happy.....God bless 'em.) Yesterday was a good day! So here's a little humor for your Thursday. A little thought.
