Recipe Time: Sundried Tomato Stuffed Chicken

So I have a new recipe to share, that was seriously delicious, elegant, and savory. I will definitely be making it again! (but probably making a little change...which I will explain later)

The Grocery List
-Boneless, skinless chicken breasts
-Sundried tomatoes (there are different varieties of these. You can buy the ones in oil in the jar - that's I opted to buy the plain, dried tomatoes at the farmers market I shop at!)
-Feta Cheese ("President" brand makes a Fat Free Feta -- wahoo!)
-Olive Oil
-Balsalmic or Red Wine vinegar (whichever you fancy, in my opinion..I chose Red-Wine)
-Lemon juice & zest
-Fresh Basil
-Mint Leaves (this is probably optional, but I threw them in since they're in my garden)
-S & P
-Crushed Red Pepper

Instructions (I'm going to apologize ahead of tijme on my lack of measurements. I made this up, so I did the "throw a little in, do a few shakes method")
  1. Place chicken breasts between 2 pieces of saran wrap, and beat with a meat pounder to make it nice and thin. (Later on you're going to have to stuff the chicken and roll it up)
  2. Marinate in red wine vinegar, 1-2 tbsp olive oil, lemon juice, some fresh basil, oregano, S & P.
  3. Preheat oven to 350 degrees Fahrenheit.
  4. In a separte bowl, stir together sundried tomatoes, a good chunk of crumbled feta cheese, about 2-3 chopped Basil leaves, 4 Tbsp (?) vinegar, and 1/2 Tbsp olive oil.
  5. Spoon some of the tomato/feta filling into the center of each chicken breast. Roll up the chicken breast.
  6. Once rolled up, place tooth picks in breast to hold it together. (Side note ** Don't use "party tooth picks! You probably knew this. I didn't think about it. My blue & green tooth picks caused my chicken to have bright "hues" of green & blue. Lovely**)
  7. Spinkle some feta, chopped mint leaves, and lemon zest on top. Bake for about 45 minutes (check on it at 35 minutes)

This was a photo of it prior to being baked! I highly recommend you grease your pan a little, as it will stick!
I also tossed some estra tomatoes on top. This meal was delicious!!!!

However......It was funny the night I made it. I was my 1st night off I'd had in a long time where we had NOTHING going on - and I could just cook a nice dinner for my husband. So I cleaned the house, donned my apron, and made this lovely meal.

....and my poor husband came home from work that night with a violent case of the stomach flu. So the house smelled of this lovely meal, while he was balled up in the bathroom vomiting all evening. And obviously didn't eat.

So it was good leftovers.....

Next time, I think I will just try plain tomatoes, instead of sundried tomatoes. As the sundried were a tad intense.

Things that make my go "hm.."


We water our grass, vegetables, & flowers 4 times/day for 10 minutes. (automated sprinkler system). And things still seem to appear dry at times, yet I have to weed the garden 2 times/week. The weeds appear strong & green as can be!

We have this rooster-sounding bird that "cock-a-doodle-doo's" every morning. Except it's not when the sun comes up. He chimes in around 4:30, and does it repetitively. And then he returns in the late afternoon just to remind us he's still around.

How do I operate Ryan's shot gun he uses for bird hunting...?

Swimming suit shopping was so fun and exciting when I was a young, hipster, college chick. Now it's just annoying.

Is anyone else following American Idol this year? I am very disappointed that it is down to two country folk. Anyone can get a country career. I wanted my jazzy, blues-singing, talented Hailey to win.

Why do I even watch that silly show?

(after shopping for a present for my nephew who was born today :D)..Why are there so many girls clothes, and so few boys clothes for new borns in the stores?? It's just not fair! Baby boys need to be dressed cute too!!

Why do some of the women @ my gym forget to wear shirts? I undestand it's warm and we all get sweaty. But I put a shirt over my sports bra, I would love for you to do that same.....

I wonder how my Chicken Drumsticks that have been slow cooking all afternoon are going to taste for dinner tonight?

Ten on Tuesday!

Happy Tuesday, everyone! As I write this post on my Monday evening...I'm feeling cynical. The past 2 days at work have made me grumpy. So let's just move on.

Isn't it exciting that the world didn't end? I thought I'd never do a Ten On Tuesday again.

1. Have you ever used Craigslist?
Yes. My husband uses it a lot whenever we can't go to the UA football games that we have season tickets for. We also get lots of bites!

We also found the house we're currently renting on Craig's list!

2. Can you sew?
I learned how to sew. Let's end the conversation there.

I would do it for 20 minutes and go absolutely loca! However, I haven't tried sewing since I was about 11 years old.

When something needs patching, or buttons need sewing around our house? My husband does it!
3. Do you pour syrup on your pancakes or dip your pancakes in the syrup?
I don't eat pancakes. Never really liked them. And now I'm Gluten free. I'm a good person to be GF, being I really don't like pancakes, waffles, cupcakes, cake, donuts, and all that other crap.

4. Rain storms: Love them or hate them?
ADORE THEM! Especially now that I live in a place where it rains like...2 times/year. (I'm exaggerating...kind of)

I even liked them when I lived in North Dakota, though. There's something exciting and cozy about them. I could really go for a rain storm right now.

However, I am so grateful to live somewhere not being affected by the tornadoes & natural disasters. My prayers go out to those enduring such hardship!
5. Do you like swimming?
I love it. As a child, I was like a fish. I could swim all day. And I did when we were at the lakes.

And I still love it. I plan on jumping into the lake upon arrival to our cabin this June! I also enjoy swimming laps and find it very relaxing, while still being an awesome cardio workout!!

6. What kind of drink do you order at Sonic?
Strawberry-Lime Real fruit slush. With extra limes! Yum.
7. Are you funny?
Because at times I think I'm funny, and find myself laughing at my own jokes -- that is a sign that I am not at all funny.
8. At what age will your kids get cell phones?
Not applicable.

9. What’s your favorite vegetable?
Tomato. I could eat tomatoes solely for a meal. Yum. I also have a fond love for cucumbers. My mouth actually waters as I think about garden-grown burpless cucumbers.
10. Were you a Girl Scout?
Nope! I was in 4-H, though. Which was like...North Dakota version of Girls Scouts. You could show animals (including farm animals), enter in garden-competitions, baking, sewing, even electrical. My grand prize was attained by wiring this cool circuit with my Dad.

I also tried "showing" our cat Allegro. It didn't go well. My cat was more like a tiger. It actually growled. And let's just saw it growled like an angry bull in heat when I stuffed him in a kennel and tried bringing him to a "4-H show".
