Gazpacho or Cucumber Salsa?

It's time for a recipe post.


So since I was pretty much non-existent/missing in action all weekend at clinicals.


I thought I'd make a big batch of "side-dish" to have around for the weekend. So Friday I did some recipe-research and found a great recipe for Gazpacho.

I have never made or ate Gazpacho before, and neither has Ryan. So I pulled out from fresh veggies, our handy food processor and cooked away.

I didn't really "dig" the recipe, since it was calling for raw onions (and that makes my stomach SCREAM in pain) -

 So I tweaked. And here it is:

  • 2 cans Tomato Juice
  • 1 medium tomato
  • 1 cucumber, sliced/chopped
  • 1/2 cup fresh cilantro
  • 1/4 cup fresh parsley
  • 1/2 large onion
  • 1/2 green pepper
  • 1/2 Habenero pepper (if that's how you "roll"...you can skip this if your feelin' mild)
  • 2 tbsp Red Wine Vinegar
  • 1/2 tsp cumin
  • 2 cloves garlic, minced
  • pepper to taste (salt is kind of unneccessary since there's tomato juice in this!)
  1. Sautee the onions, habenero, and garlic in a pan until soft
  2. Chop all ingredients and add to food processor
  3. Add cucumbers and tomatoes last, for you don't want these chopped too finely.
  4. Refridgerate for 2 hours minimum to allow flavors to blend.
Now, Friday night instead of eating this as the traditional Gazpacho soup, that is normally is. I used it as a garnish to our Tilapia Fillets. It. Was. Heavenly. An excellent complement to the fish! Very, very fresh!

Here is where the humor comes in.


Saturday I was at clinicals all day. We had a going away party to attend that evening. So, I planned on just meeting Ryan there (since I don't get off clinicals until about 7:40 pm).

When I arrived, Ryan said, "Hey, I am so sorry - I put it in a container and everything, but I forgot to bring that cucumber salsa to the party. Man I ate that stuff right up today -- best salsa you've made in awhile! Nice work!"

....I hesitated for a moment, because I didn't get what he was talking about.

And then it dawned on me -- that he thought the garnish on our fish Friday night was salsa.
So, apparently I did something wrong with this recipe. I had some for lunch yesterday - and yep, it definitely was tasting like a salsa with a fresh-cucumber-y kick.

But delicious! So, if you decide to try this recipe....don't expect gazpacho-y freshness.

Yum! I have been researching gazpacho recipes because I am planning to serve it at our dinner club party next week. Great pictures. I will give this a try!
Ha! Love that Ryan thought that was salsa. I would have thought the same probably ;)

If you ever see a cucumber margarita on a menu, you should try one. Or better yet, come to minneapolis and I can take you to Masa for one. They are to. die. for. So yummy and refreshing!!

Currently - May edition

   I haven't blogged much - but the last time I did one of these, Maddy was 9 months old. It's really fun looking back on the things that were "stressors" to me at that time. Prior to that - my currently post was a pregnancy edition.  So here goes May 2022. Maddy is almost a 15-month old and summer has set ablaze here in Tucson.   Reading :  I really wish I had a better answer for this one, but I have not been the best about reading lately. The only book I'm reading is "How to talk to your kids so they'll listen and listen so they'll talk". It is really good. Most of the book is geared more to school-aged kids, in my opinion. But it highlights some great communication skills with children to help them trust you as a parent to be open and honest. Eating: All the smoothies. It has been getting really hot here - and every day when we get home from our stroller run I make a smoothie for Maddy with whole milk, Fage, and fruit - and then a smoothie for

8 Months

 Well, I missed month 1-8. But it is never too late to begin, right? Here is a recap of Maddy at 8 months. (I'm totally stealing this idea from my sister, Lisa. I thought it was so neat that she recaps her son's favorites and happenings every month)   How am I sleeping? Better than I was - but not as good as my peers. It also depends on if I'm teething. Last week, her 2nd tooth was poking through - so she was awake 3 times.  No matter how much I let her cry it out, I cannot seem to cut down her feedings. When I go in there - she is literally pulling at my shirt with her mouth wide open. So clearly she's hungry.  She eats 2 times/night and luckily goes right back to sleep. It is what it is. What am I eating? While we have had breastfeeding and bottle refusal struggles - I am so glad that taking to food as been relatively smooth.
