Poblano Provalone Burgers

I created some gourmet burgers, as planned, Friday night. I searched some recipes online, and nothing was "hitting the spot" for me. All the recipes I as perusing were probably excellent - but it wasn't satisfiying my vision. I finally found a recipe for Bobby Flay's Poblano Pepper Burgers.

His recipe involves grilling peppers, placing in a blender with honey, cilantro, s & p, making a sauce -- and using that to garnish the burger. I am almost positive this would be absolutely delicious. But, it wasn't what I was wanting. So instead......I did my own thing.....

1) Make patties. Add BBQ sauce and fresh herbs to the hamburger so it's sticky (I cook only with low fat beef). Make sure you throw a little cayenne in there too. Gotta have a little bit of heat.

2) Grill poblano peppers face down right next to the burgers on the grill.

3) Once the burgers are getting read, place 1 pepper on each burger, and top with a healthy slice of Provalone cheese. This way the cheese blankets in the pepper.

They look pretty simple, sweet, and non-intimidating straight off the grill....but....

When placed on a Multi-Grain Ciabatta roll, garnished with pickles, tomatoes, romaine lettuce, and a little K & M (ketchup & mustard)................

Delicious. Great served with a bottle of Dos Equis.

In addition to creating burgers our weekend was been a little bit more hectic than we envisioned. But it's been fun.

Friday was spent kind of running errands, going to the gym, getting the house together, Ryan wood-worked, I did some shopping.

Saturday Ryan had a Precinct Committee member training all morning. So I cleaned, worked out, and attempted to find a dress in my closet for the wedding that didn't make me angry.

Which brings me to...............

Remembering the days in college when I loved wearing dresses. It was fun. Exciting!!

Now it makes me crabby.

We attended a wedding yesterday and it was a great time. The bride & groom couldn't have asked for a better day. 70 degrees, VERY mild breeze, sunny.

It was kind of funny.......The wedding was on January 29 here in Tucson, AZ. Outdoor wedding. The weather was warmer than our wedding in AUGUST in Minnesota.

Well, I hope this finds you all either finishing off a fanstasic/relaxing weekend or starting up a great new week!

Happy February! I already have a dish of sweethearts-with-the-cheesy-statements in my kitchen. I kind of love these candies.

I'm trying to picture an outside wedding in January in ND! Hmm - you couldn't tell the bride from the snow! We got another inch or so today and it was below zero all day - that's not supposed to happen! I know you are enjoying these temps as it won't be long and you'll be back to the 100's! Tough to have an outdoor wedding in that!

One Confused Lady

Yesterday morning was packed with a session of cross training.....rushed home to shower and get professional-looking....headed across town for an interview.....kicked butt at my interview...."bopped" over to our house to see the progress of the build......headed to the "design center" to sign more paperwork.... (Side note: I cannot get over just how much paperwork is involved in building a house. Holy Hannah. And we haven't even closed !!! Iy-yi-yi....Those lovely people in history who got law-suit-happy.....God bless 'em.) Yesterday was a good day! So here's a little humor for your Thursday. A little thought. A little depth.....( A little cynical rant ) Afterwards, I decided to head to one of my favorite places to peruse.... Target. But my experience at Target was far from fun, relaxing, or pleasant. Just confusing. Loud. Crazy. Despite many screaming children-temper tantrums.... Which is common and un-escapable. Although screaming chi...

Winter Storm hits the desert?!

Happy New Years Eve to all. I hope everyone is able to celebrate with family, friends, or loved ones tonight! And -- I hope everyone has a safe evening!! Be careful out there! We are finally experiencing some "weather" here in Tucson. I use "quotation marks"...because this "weather" the Tucsonan's are FLIPPING OUT over is just a "chilly October Day" in North Dakota (where I came from) Yesterday morning...I was getting off work. I could hear the wind blowing, and the rain falling throughout the night. There were moments where...I kind of want to crawl into one of the hospital beds and take a snooze. When 7:30 am rolled around, I was very anxious to go home after 3 nights on. I was ready to BOLT out the door.... ...when I was stopped by an oncoming shift coworker, who stated, "Abby, maybe you should stick around until the weather clears up. It's pretty bad out there...." FEeling concerned, I asked, "Really? Are th...

St. Anthony, Where are you??!!??

So. Let's talk about my day so far. And why I suck at being organized. Do any of you know these people who always have it together? They never lose ANYTHING. They have a spare set of every important document, item possible. Every document has a file, every item has a place, every place has a label. They are always collected, have every duck is in the row. They live in perfection. This description is my husband: Ryan. My second question: Do you know anyone who's life is an absolute train wreck? They are always running in circles. They cannot be responsible for an important item if their life depended on it, because the strangest things happen to them. They never seem to be at the right place, or never seem to be on time. They cell phone often ends up in the refrigerator. There is always a giant debacle occurring. This description is me: Abby. Well this morning two people of this nature got to mingle a little. Well, they happen to be husband and wife--so they have to mingle withi...
