Kale Salad Love

I haven't done a great deal of recipe posts lately. Maybe because I haven't done a great deal of cooking lately! ;)

I am just not good at cooking when Ryan is gone. It's so easy to just have cheese and crackers for dinner.....instead of a nutritious meal. When a man lives in the house - there are expectations to eat real meals containing grains, meat, & vegetables. So it's kind of exciting and liberating to say, "I'm going to have cereal and nutella for dinner!"

But this is something I'm working on. I took Monday & Tuesday off this week to recover from the marathon. Therefore, spent my Tuesday making quinoa, butternut squash, and chicken breasts to prep my meals for the work week ahead!

But my favorite staple I'm sharing is my favorite Kale Salad ever! My friend Kristin introduced this to me, and it's now my favorite. So fresh and delicious! And insanely easy. It's a great base, too.....

Ingredients:
  • 4 cups organic kale, chopped, ribs removed
  • 3-4 tbsp. EVOO
  • juice of 2 lemons
  • 2 cloves garlic
  • S & P to taste
  • hot red pepper flakes to taste
  • grated parmesan cheese to taste
Instructions:
  • Whisk lemon juice, EVOO, garlic, S & P, and crushed red pepper.
  • Pour over kale, and toss. Let set for about least 5 min prior to serving
The best part of this salad, is you can pre-make it and the kale won't wilt! I like to make a big batch at the beginning of the week. Then as the week goes on, I can bring it for lunch and toss chicken breast or garbanzo beans or whatever suites me! It's so fresh and good! Especially if you're a citrus-junkie like me!

I have never bought kale, but have eaten it at restaurants. I like it, but the tough texture of it is a little bit of a turn off for me. But I had a wonderful kale salad this summer that was 'macerated' in a lemon juice dressing and it made the greens more tender. So I bet i would like this recipe with the kale soaked in the dressing extra long! :)

My mid-week meals are totally boring, or they are leftovers. So I can totally see why you aren't motivated to cook when you are cooking for one. I usually end up only really cooking on the weekend!

I have only eaten Kale in dehydrated form, so I truthfully can't say if I like it! I did see it in a Pasta Fagolia soup recipe and I thought that sounded good and it wouldn't wilt like spinach would. And it did have that vibrant green look to it! That is so interesting that it doesn't wilt! I must try it.

Currently - May edition

   I haven't blogged much - but the last time I did one of these, Maddy was 9 months old. It's really fun looking back on the things that were "stressors" to me at that time. Prior to that - my currently post was a pregnancy edition.  So here goes May 2022. Maddy is almost a 15-month old and summer has set ablaze here in Tucson.   Reading :  I really wish I had a better answer for this one, but I have not been the best about reading lately. The only book I'm reading is "How to talk to your kids so they'll listen and listen so they'll talk". It is really good. Most of the book is geared more to school-aged kids, in my opinion. But it highlights some great communication skills with children to help them trust you as a parent to be open and honest. Eating: All the smoothies. It has been getting really hot here - and every day when we get home from our stroller run I make a smoothie for Maddy with whole milk, Fage, and fruit - and then a smoothie for

8 Months

 Well, I missed month 1-8. But it is never too late to begin, right? Here is a recap of Maddy at 8 months. (I'm totally stealing this idea from my sister, Lisa. I thought it was so neat that she recaps her son's favorites and happenings every month)   How am I sleeping? Better than I was - but not as good as my peers. It also depends on if I'm teething. Last week, her 2nd tooth was poking through - so she was awake 3 times.  No matter how much I let her cry it out, I cannot seem to cut down her feedings. When I go in there - she is literally pulling at my shirt with her mouth wide open. So clearly she's hungry.  She eats 2 times/night and luckily goes right back to sleep. It is what it is. What am I eating? While we have had breastfeeding and bottle refusal struggles - I am so glad that taking to food as been relatively smooth.
