Celebrate

In preparation fior my MOm & Dad's visit and in celebration of being DONE with nursing school....I have rekindled with one of my FAVORITE past times ever! Baking.

...(not decorating, as we learned from my birthday cake post)..Haha!

Not having to study...I have been enjoying my life a little. And here are a few of the things I've been brewing up (and a few recipes attached)....

Sunday I made a pot roast with homemade Herb-crusted bread. The roast slow cooked all day with potatoes, carrots, onions, and celery. The bread was a basic white yeast bread with thyme, rosemary, and oregano in it.

Heaven.

Yesterday, I baked cookies for my husband. Which I haven't done in awhile. Just your good ole, hearty, Betty-Crocker-cookbook style.

Today I did some backing in prep for the weekend and here are the recipes I will share.

Rubarb-Blueberry Muffins
  • 1 cup rhubarb (frozen or fresh), chopped
  • 1 cup blueberries
  • 1/4 cup butter, soft
  • 3/4 cup sugar
  • 1/4 cup Fat Free Sour Cream (okay, it doens't HAVE to be fat free..but you know how I am..)
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/3 cup milk
  • some lemon zest
Mix butter and powder ingrediates in a large bowl. In a separate bowl whisk together the milk, egg, and sour cream. Add the "cream" ingrediates to the powder - but don't mix it too finely! (I did some research, and it said chunky=good with muffins). Then add your rhubarb and blueberries. Spoon into muffin tin (it makes 12 big muffins).

Preheat oven to 400 degrees Fahrenheit. Bake for 20-25 minutes.

I also made a Lemonade Pie to serve with our dinner on Saturday night. Here is the recipe! It's a great summer dessert.

Lemonade Pie
  • 1 can Lemonade concentrate
  • 1 can Fat Free Sweetened Condensed Milk
  • 1 8 oz container Cool Whip
  • 1 9 inch graham-cracker crust
  • 1 lemon
-Stir thawed lemonade concentrate, fat-sweetened condensed milk until well-blended. Fold in the cool whip. Pour into the pie crust. Curl some lemon-zest on top of the pie (for garnish). Slice thinly quartered lemons on top (once again, for garnish). Place in freezer for at least 4 hours.

Yum!

The muffins and pie were delicious and the weekend was perfect! We had such a great time and were so proud to watch you "graduate" and receive your pin - very proud that I could put the pin on you! It meant so much to me! Thanks Abby & Ryan for everything!

A weekend of the great outdoors

As I am preparing for my return to the real world tomorrow, I feel a strong sense of dread. As I won't have a weekend or free week for a long while! Instead of focusing on that.......I'm sharing a few snapshots from our awesome weekend! This weekend we were in Big Lake, AZ -- which is about 20 miles from the New Mexico border (just 5 1/2 hours from our house). (last weekend we were in Parker Canyon...which I will blog about another day) We camped from Friday-Monday, which was the perfect length of time. The temperatures were a great escape from hot Tucson. In fact...it was VERY cold at night. It was in the low 30's at night, 60's during the day. The trout fishing was incredible. Here's a few snapshots: Home Sweet Home for the weekend! One Confused Lady

Yesterday morning was packed with a session of cross training.....rushed home to shower and get professional-looking....headed across town for an interview.....kicked butt at my interview...."bopped" over to our house to see the progress of the build......headed to the "design center" to sign more paperwork.... (Side note: I cannot get over just how much paperwork is involved in building a house. Holy Hannah. And we haven't even closed !!!
