Recipe Time: Balsalmic Spinach Chicken

Greetings, all! Hope this finds everyone having a fantastic day! Things are going great over here.

I am a renewed person since I've switched to day shift. Working @ night involved going about 2 days/week where I would stay awak from 24-30 hrs straight. Which just created one very crabby Abby. I was starting to get shaky-blood-sugar-drops, heart palpitations, and other unhealthy/odd symptoms when I was awake.

I'm feeling back to 100% now, though! :)

Another hobby I've revisted since I'm back to a normal schedule is cooking! I was cooking grilled chicken on a bed of spinach or fajitas almost every night....It got old fast.

Tonight I tried a new recipe, that I HIGHLY recommend! It was delicious. And it's low fat, while still hearty!

So for your grocery list......
  • 2-3 Boneless, Skinless chicken breasts
  • Fat Free Cream of Mushrom soup (we're keeping this healthy :D)
  • 1 can canelli beans (or white beans will do)
  • 1/3 cup Balsalmic Vinegar
  • Fresh Basil
  • A few handfuls fresh spinach (excuse my lack of measurements....I don't "do" measuring cups)
  • Chopped onion
  • 3 cloves garlic
  • olive oil
  • Thinly sliced fresh mushrooms
Step 1:
  • Walk out to garden and snip fresh basil from plant ;) (eee that brings me joy to be able to do!)
  • Beat chicken with meat cleaver and sprinkle salt and pepper on it.
  • Heat pan on oven, drop enough olive oil in pan to prevent sticking
  • Cook the chicken breasts until cooked through.
  • Remove chicken breasts with some juice and wrap in foil and keep on side.....
Step 2:
  • Simmer onions & 3 cloves garlic
  • Pour in can of canelli beans, cream-of-mushroom soup, 1/3 cup balsalmic vinegar, and chopped up basil leaves, (I added in oregano at this point, too)
  • Add in mushrooms
  • Add in handfuls of fresh spinach
  • Stir well for about 1-2 minutes, and return chicken breasts to the pan
  • Allow to simmer for about 1-2 minutes
Step 3:
  • Enjoy!!
I wish I had a picture because this looked quite pretty. But....we eat it before I remembered...

Yum! Sounds really delicious, and healthy. I am envious that you can snip herbs from a garden! When it warms up, I plan on planting a few herbs on my patio. Hopefully it will be warm enough to do that later this month!

Currently - May edition

   I haven't blogged much - but the last time I did one of these, Maddy was 9 months old. It's really fun looking back on the things that were "stressors" to me at that time. Prior to that - my currently post was a pregnancy edition.  So here goes May 2022. Maddy is almost a 15-month old and summer has set ablaze here in Tucson.   Reading :  I really wish I had a better answer for this one, but I have not been the best about reading lately. The only book I'm reading is "How to talk to your kids so they'll listen and listen so they'll talk". It is really good. Most of the book is geared more to school-aged kids, in my opinion. But it highlights some great communication skills with children to help them trust you as a parent to be open and honest. Eating: All the smoothies. It has been getting really hot here - and every day when we get home from our stroller run I make a smoothie for Maddy with whole milk, Fage, and fruit - and then a smoothie for

8 Months

 Well, I missed month 1-8. But it is never too late to begin, right? Here is a recap of Maddy at 8 months. (I'm totally stealing this idea from my sister, Lisa. I thought it was so neat that she recaps her son's favorites and happenings every month)   How am I sleeping? Better than I was - but not as good as my peers. It also depends on if I'm teething. Last week, her 2nd tooth was poking through - so she was awake 3 times.  No matter how much I let her cry it out, I cannot seem to cut down her feedings. When I go in there - she is literally pulling at my shirt with her mouth wide open. So clearly she's hungry.  She eats 2 times/night and luckily goes right back to sleep. It is what it is. What am I eating? While we have had breastfeeding and bottle refusal struggles - I am so glad that taking to food as been relatively smooth.
