Kitchen Musings: Pesto Turkey Burgers

Our kitchen has been active lately with several new recipes.

My favorite thing that is a'brewin' is our prickly pear infused liquors! But there will be a post to come on that soon. I'm pretty stoked about it, though! We are actually harvesting plump, juicy, red prickly pears from our cactus, and infusing them in mason jars w/ vodka and agave nectar.....

Over the weekend, I tried to make comfort food for my husband who went on night shift starting the 4th of July. Right now our schedule couldn't be more opposite. He wakes up as I go to bed. But that's okay - we still live in the same household, and this schedule is temporary!

A few of my comfort creations were:

  • Salted Puppy Chow (sea salt, pretzels, puppy chow, #crack) - I made 2 big batches of this. One which I brought to the 4th of July party I went to, the other I sent with Ryan to work.
  • Crockpot lasagna - super easy, super delicious! Why have I never tried making lasagna in a crockpot before? (being last summer I lived in a hotel and cooked everything in a crockpot)
  • Pesto Turkey Burgers - my random creation tonight, which I will share. My basil plant is producing like crazy, so I'm using it a lot so it keeps producing!
Ingredients:
  • ground turkey (I used 93%/7%) 1 lb
  • 1/4 cup fresh basil
  • 2 Tbsp balsalmic vinegar
  • 1 handful spinach (1/4 cup?)
  • 1 egg
  • 1/8 onion, finely chopped
  • 4 cloves garlic
  • salt & pepper to taste
  • 2 Tbsp olive oil
  • Mozzarella cheese slices
  1. Finely chop up the spinach & basil leaves. Stir it with onion, garlic, egg, vinegar, & olive oil.
  2. Mix in the ground turkey. Still well.
  3. Form into patties. (My secret is to try to make a "well" in the middle)
  4. Spray hot grill with olive oil to prevent sticking.
  5. Evenly grill both sides.
  6. Add slices of mozzarella - allow to melt.
  7. Serve on a bun or a bed of spinach if you don't have any buns! ;) Goes really well with sliced tomatoes!
....And I completely forgot to take any photos of this one! Which is a bummer, because it looked pretty cool!

The more interesting the burger, the more I like it! I find it impossible to just make a plain burger these days. It has to have spinach, basil, or feta in it! So much more flavor!

Mmm, that burger sounds good! I usually just make plain burgers but like the sound of yours better!

I can't wait to hear how your infused liquor experiment goes! How long do you let them set? The rhubarb vodka one I'm making this weekend takes 2 - 4 weeks but I'm going to let it sit the whole 4 weeks, I think, but may sip it at 3 weeks to check it out.

Yum! That sounds really good! My basil plant is producing well, too, so I will have to make these sometime as I have some ground turkey in my freezer. I usually like my burger with ketchup and spicy mustard but that only works for beef ones. For something like this, I would just want a little bit of cheese!

The infused liquor experiment sounds cool and delicious!

8 Months

 Well, I missed month 1-8. But it is never too late to begin, right? Here is a recap of Maddy at 8 months. (I'm totally stealing this idea from my sister, Lisa. I thought it was so neat that she recaps her son's favorites and happenings every month)   How am I sleeping? Better than I was - but not as good as my peers. It also depends on if I'm teething. Last week, her 2nd tooth was poking through - so she was awake 3 times.  No matter how much I let her cry it out, I cannot seem to cut down her feedings. When I go in there - she is literally pulling at my shirt with her mouth wide open. So clearly she's hungry.  She eats 2 times/night and luckily goes right back to sleep. It is what it is. What am I eating? While we have had breastfeeding and bottle refusal struggles - I am so glad that taking to food as been relatively smooth. Currently - May edition

   I haven't blogged much - but the last time I did one of these, Maddy was 9 months old. It's really fun looking back on the things that were "stressors" to me at that time. Prior to that - my currently post was a pregnancy edition.  So here goes May 2022. Maddy is almost a 15-month old and summer has set ablaze here in Tucson.   Reading :  I really wish I had a better answer for this one, but I have not been the best about reading lately. The only book I'm reading is "How to talk to your kids so they'll listen and listen so they'll talk". It is really good. Most of the book is geared more to school-aged kids, in my opinion. But it highlights some great communication skills with children to help them trust you as a parent to be open and honest. Eating: All the smoothies.
